Einkorn is an unhybridized wheat unlike today's modern hybridized wheat.
Therefore, einkorn contains only genome A and no D. Easily digestible and sufficient in many vitamins, minerals and nutrients such as lutein, alpha and beta carotene, manganese, phosphorus and many more.
1. Einkorn Pudding (Cook Time: 30 minutes):
- In a pot, combine Einkorn, milk and butter. Bring mixture to a boil, cover and cook on low flame.
- In a separate bowl, beat eggs and add honey. Temper the egg mixture by adding a little bit of hot milk.
- Pour egg mixture into the pot, stirring slowly until it thickens, abut 20 minutes. Enjoy hot or cold.
